The Gourmand Evolution
There’s currently a “Gourmand Evolution” happening both here in Australia and across the international fragrance market, bringing with it greater nuance and complexity. Instead of single-note fragrances, the trend is towards compositions where gourmand elements are layered with other fragrance families (floral, woody, spicy, aromatic). This creates more sophisticated scents that aren’t so obvious.
Blackberry scents are rising in popularity, often used to add depth and a darker, more mysterious character—offering a sophisticated alternative to the more familiar profiles of strawberries and raspberries.
Coffee scents are now exploring different brews like espresso and latte, mixed with spices or creamy notes.
Kooky Gourmands
Gourmand fragrances are also getting fun and nostalgic, with scents inspired by childhood cereals and lollies—now with a grown-up twist like tart citrus or a hint of bitterness. At the same time, rich notes of aged whisky and crafted cocktails are adding depth, warmth, and a touch of luxury.
These new gourmand profiles open exciting opportunities across all applications—from home scents (like candles and diffusers) to body washes and hair care—offering a fun yet sophisticated and comforting experience.
As fragrance manufacturers, we at JH Lever see this as an exciting opportunity to push creative boundaries and offer truly unique and memorable creations, not only for the Australian market but also for our international customers.
